Eggplant is the vegetable highlighted in this episode of Cooking Up The Season. Eggplant is a summer vegetable found in North Carolina during the months of June, July, and August. Eggplant is fat-free, cholesterol-free, low in calories, sodium-free, and is a good source of dietary fiber. Eggplant can be prepared in several ways some including roasting, grilling, and used in a stir fry. Eggplant can also be frozen for later use.
