Okra is one of my favorite summer vegetables. It is fat-free, very low in sodium, cholesterol-free, and low in calories. It can be prepared so many different ways. Okra can be roasted, sauteed, fried, boiled, added to a stir fry, and much more. Okra can be frozen for use later or you can make pickled okra.
